Ireland does use the Euro.
Northern Ireland is part of the UK, and does us Sterling. It's just that our local banks print their own notes, same as the IOM and Scottish.
But despite this arrangement, it still isnt deemed legal tender on mainland UK ( not sure if Scotland and Wales are treated differently ? )
But it is a right PITA having money branded as sterling, that apparently isnt treated as legal sterling throughout the UK.
