What temp are you seeing first ?, the oil gets hotter as soon as it has been sucked up by the pump as it starts absorbing surrounding heat, the reason I always fit the temp senders at the oil pressure points, so long as you have around 70-80 C it is fine, but one way to get higher is to use a higher temp stat, so there is less cooling effect from the water temp in the oil/water cooler(modine).
