My mate has 330mm under his 16" MO's on his pulsar, but no way they would fit under my escos rims.
Internal size/shape of wheels vary a lot.
On my clio ive got 2 sets of wheels, one cleared my calipers with ease, the other I had to grind quite a few mm out of to get on, both are 15" wheels.

using the cast caliper (as opposed to an alloy one) usually means that the 'bridge' over the circumference of the disk is thinner. Thus, depending on how thin the material is left at this point, and close the caliper runs to the disk will dictate the radial clearance required. In fact some slight easing with an angle grinder on the inside part of the bridge on a cast caliper allows it to move in closer to the circumference of the disk. Also required for this mod is a little grinding of the caliper carrier to acomodate the thicker disk.
Finally Chip, as you say, it also depends upon the wheel that is used.
stock caliper / carrier (with a few mods) / 324mm disk / momo sport 16" rims result in about 7mm radial clearance between wheel and caliper
