If the bodyshop chemically cured and low baked it, then you can polish and protect it straight away without any problems (and it is best to do this, as then you will have protection in place against the elements). However, if it was not force cured, then you should indeed leave it for 30-60 days to fully degass and cure before polishing and protecting it. In terms of future care, getting a decent wash kit makes a lot of sense, as if you get the wash stage wrong then you will repidly swirl up the finish - not good. Wash kits like the ones on this link are worth considering...
