Default fiesta rs 1800 lambda problem

hi ive got a fiesta rs 1800 which has developed a running problem , the engine at low revs struggles then at 2500rpm comes in at full power
. ive changed the spark plugs , coil pack , leads , injectors seals , gaskets , checked for air leaks , changed the fuel filter , tps all with genuine ford parts , fitted all this 2 day and its still bad so i decided to unplug the lambda sensors and it drives perfect , could it be as simple as a lambda fault , surely that would make the car run poor as it adjusts the fueling for the cat, how safe is it to run the car without the lambda sensor unplugged?
any help would be most greatful
