Have you checked the water level? You might have a leak. At first I thought it was the thermostat but it doesn't make sense if it switches on when it's red hot. The problem is not the switch imo.

Anyway I wouldn't recommend a manual switch cause if you forget to turn it on... GOOD LUCK! But a lower temp thermostat yes. But first fix the problem!
