i saw some statistics somewhere once and the cheap and cheerful components made up something like 90% of the component sales

But those statistics are most likely due to people just replacing things on their Dell/HP/whatever workstation as and when they die, with like for like replacements.
I doubt very much those stats are only for system builders, and in answer to your first question, I would expect most people that build their own PC would buy the best value for money motherboard for their application.
Not necesarily the cheapest or the most expensive, but the best spec for the best price with reliability in mind.
