Get auto trader and look around the internet for examples of the car and the value it is selling for at the present time as evidence of what it would cost to replace, ask them where they get their valuation from

If its non fault and gets proven as such, then you will keep your no claims

When I had a non-fault accident, I paid my excess which was claimed back of the other party and a cheque was sent to me

failure to disclose this could invalidate your ability to get repairs completed

mind you I would be careful how much you argue with the insurance company, if there is a dispute about the car being modified pushing the valuation may prompt them to tell you to go to hell and not pay a thing.
