Rally design used to do a big disc kit for escorts with a bracket to move the caliper but stopped doing it after they realised the pads would eventually push on each other rather than the disc.
Best thing to do is find a pair of calipers off an early granada cossie and fit 2wd cossie discs
Depends on the caliper carrier and disc manufacturer I have found.

Brembo, Ford, etc... discs fit fine. Some cheaper manufacture discs are slightly smaller (I have measured a set of cheap Drivemaster discs @ 280mm before instead of 283mm).

Also, even though S2 Turbo caliper carriers (bit that holds the caliper to the knuckle) are meant to be the same as the Sierra/Granada DOHC and V6, I have seen a couple of early carriers locate the pad a bit too far out.

One thing that you do need to do with most of the kits is to file about 2mm into the caliper carrier where the outside edge of the disc goes, as it can cause the disc to grind slightly on the carrier when the disc expands as it gets hot. Again, most kit instructions tell you exactly what you need to do in any case.
