Can't help you with the sun roof as mines a motorsoprt one, but the clocks have a tendancy to do that after time. As far as im aware you can't re-furb them, but don't hold me to that. It's either buy new ones or get some lockwood dial kits, and then change the part of the dash from a normal mk5 so it will illuminate the dials.
