Default PC based multitrack recording software?

Right, who on here knows about this stuff?

Let me set a scene....

your in a nice "sound" room, the kit is mic'd fully (individual drum mics leading into a dedicated 16ch drum studio mixer, which in turn is fed into channels 1 + 2 on the mian desk mixer)

your guitars and bass are also fed into this main mixer, which is linked to your amps and PA system - basically a superb rehersal studio.

Now, you can take line outs to a mindisc (or tape/DAT) recorder to record demo's etc in a "live" sense (ie: one take, all instruments at once "live style")

What I am interested in is a PC software programme making your PC a digital multitrack recording studio. Basically feed the end mix from the main desk straight into a PC (via a line in I guess) and record to HDD. So you could record the drum track first, then lay down the rhythm guitars, then the bass, then the lead guitars, then add vocals. Re-mix and tweak (ie adding effects, echo for example, to vocal sections, pulling the guitars higher/lower at sections etc) then review completed track and burn to CD for optimum digital "demo" quality, and be able to save file as MP3 for net uploading.

So thats the scene, what it is I am after - anyone help me with links, leads, blah blah?
