If you are using it at home, use Home Premium if you want Media Centre only.

If you want to use Media Centre, encrypt your HDD and add the machine to a domain, use Ultimate.

Look for 80GB min for the install and to have enough space afterwards to install other things. I'd recommend 2GB RAM minimum aswell.
