Sorted it, for the sake of being helpful to anyone else potentially having the same problem, this is what i did.

Turn the ps3 completly off so the red light is showing, then put your pinky over the power button, when it turns on dont move your finger, keep it there till it beeps a second time and the screen should flicker, this resets the tv's display settings and it will show the menu as normal
