The DS2000 material wasn't really up to the job on heavy Cosworths, hence why it was discontinued some years ago from the whole Ferodo range.
The DS2500s are also really only fast-road pads and to be any good in a Cossie, it is essential that they have good fluid (high wet boiling point) and braided hoses. On track, you will still find them a little wanting though, if used with the OE Ford 2wd calipers, due to the fact that these are cast (pig) iron

and just cannot dissipate any heat, so put all this into the pads, and the DS2500 material can't take it and overheat.
The DS2500 is okay on alloy calipers and seems to perform better the bigger the discs (due to better heat dissipation), but for track use, I would use the DS3000s if Ferodo was to be your referred choice.
I have always steered clear of EBC products due to the infamous disc warping issues that the Greenstuff pads cause. However, I have only ever heard good reports about the Redstuff, so given Tab's experience, it has got to be on the list of pads to consider

. I find the Mintex pads to be "squeely".
