AFAIK The stack dash is basically reporting the pressure due to the effects of the fuel pressure regulator (FPR).

As for alarms, I used to set mine after driving it and monitoring the "normal" values. Most FPR are set to operate around 3.5 bar, so set alarm to 3 bar (approx 45 psi) should be fine.
