Well for any more than 260 ish you want to be looking into going to steel rods on any of those engines.
Any of the CVH based engines will need a big valve ported head. The Zetec will just about cope with that without needing too much work but you will need to modify it to suit the manifolds.
If you want a revvy engine with progressive power that pulls to the limiter then start with the 1600 cvh. If you want to break gearboxes and destroy tyres and change gear at 5.5k rpm then go for a Zetec based engine.
