Head is quite easy really - just get a Haynes manual for any CVH engined Ford and it will tell you what to do. My only word of advice for the heads is be careful when putting the torx/hex head socket into the top of the head bolts as the oil that will be in the top of them makes it hard to see if they're in straight, so rounding them off is quite easy (I know this from experience recently!).
Good work on the project ram, makes me wish I still had my old grey FRST!
