Depends on what type of bars you like to go into and what type of music you like. Personally I like trendy bars so I tend to go to the bars at the top of the quayside and down the quayside itself. My usual route would be The Living Room, The Lodge, Hoko10, The Aitkinside (not a trendy bar as such but it's still cool), Bar 38, Chase, The Quilted Camel, Jimmys, then onto somewhere like Sea. Or you could go the central station route, Long Bar, Weatherspoons, Revolution, Tokyo, The Apartment, At Home, The Attic which is a bar and a night club with 3 levels. I haven't been clubbing in the town for ages so can't really advise which is the best place to go, Blue Bamboo is good I've been told, Ikon has just changed to Liquid if I remember correctly but it's a bit out of the way to go to, it's huge though so don't think that you would have a problem getting in on New Years Eve. I would try and contact a few of the clubs to see if you can get on the guest list somewhere, we get offers all the time for Tiger Tiger after I put myself on their mailing list. Here's a list of the clubs that I know of...... Tiger Tiger (The Gate), Liquid (Other end of the town), The Attic (Top of the Quayside), Blue Bamboo (Bigg Market), Mood (The Gate) Sea (Quayside), Baha's (Quayside), Digital (Centre for life), Foundation, you'd need to get a taxi there as its quite far out of the town.
Hope that helps you a little bit
