You don't, because you don't need to. Gears are irrelevant as you are setting up the engine, nothing to do with the gearbox. As long as you load up the engine (3rd and 4th gear are fine) you can set an engine up. The engine only cares about load, not speed.
High load and high engine speed testing is a good idea though.
