as the evaporator cools the air, it also dehumidifies it, and the condensed water should come out of the HVAC box from a drain tube(s) onto the ground

how much water comes out depends very much on how humid the air is and how long you've been running it.

how well it's working is not easy to say just by giving you a figure like measuring the vent temperatures, as it depends on so many factors like outside temperature, sun load, engine speed, humidity etc.but generally if the air con takes over 20 degrees out of the air temperature going in to it, it is doing alright.
