Hoorah - managed to sort it!!
It seems that the settings on both for the idle control valve were seriously upsetting mine. The ICV was basically refusing to adjust the idle, and as such, it was attempting to idle at 600rpm!
I grabbed the idle control settings from the standard yellows map, and superimposed this into the estate map. and we got somewhere.
Then, had to sort the advance. On the estate map, the BTDC was way too advanced for my car (at approx 32 is on idle settings in the map table). I adjusted these back to approx 16 BTDC, and also adjusted the fuelling upwards, and hey presto! The car will now idle on the S8.
With that now settled, I will now need to set aside a SERIOUS amount of time with my mates wide band lambda and rolling road, to get a complete map!!!

Did you ever work out how to interface your Tech Edge Lambda sensor with the S8, or did you not get that far? And also, what was the name of the manufacturer for wide band controllers did you recommend (I have the memory of a sieve !!!!!!)
