If you get a small turbo one, then look out for the following;

Leather- a must have
Aircon- good idea
Airbag, passenger & driverside- good idea
Electric windows- yes
Electric sunroof- yes
Fuel cap door shuts properly- a must
Turbo needs replacing at 60,000- usually go for one that's had a new turbo.
1995-1996 registration- good
Std car will have no ecu tampered with. Chipped ones will have signs as follows- trim panel screws mashed, socket marks on the 10mm bolt that secures the ecu loom, glue missing from ecu circuit board where chip fits and usually plastic cover also missing from here too.
Exhaust will have cats- new MOT laws to watch for.
Brakes warp easily on most Escorts anyway.
