They have a self tapping, revers thread on the end, so instead of winding it in clockwise (like you would to tighten) you wind it in anti clockwise. What you do is drill a hole in the bolt slightly smaller than the easy out (so there's enough meat left for the easy out to tap into) and then wind the easy-out in anticlockwise. Cos of the reverse thread it bites into the bolt and tightens inside it, lokcing it self in. Then you carry on "undoing" the easy out (turning anti clockwise) and it grips the nut and un-does it
Usefull of bolts and also for screws that have the slot/cross pattern stripped;
