Depends - I've heard that the reason why they offer you more money than the car is worth is to 'disappear' the extra x amount of Łk. Or as you say they will just cancel the cheque once you've cashed it in at your bank leaving you seriously out of pocket and without whatever it is you're selling!

Whatever scam it is - it's definitely not worth pursuing!
