Well, I guess you might have eaten by now... but just in case you haven't.... We usually pre-heat the oven at 220C, put the roast in a roasting tin and drizzle some oil over it, add some pepper and herbs, put some onions and slices carrots on the bottom of the tin. Also add a glass of water or red wine. Do not put any salt though. Then put it in the hot oven. Cook it for 15mn per pound.

Now that will be red in the middle... because that's the way we like it!! If you want it more on the well done side, add another 15 to 30 minutes.

Leave it to rest for 10 minutes in the warm overn (but switched off) before you cut it.
