i expect it's because the car cannot be held at full throttle on the road when mapping, in the same way it would on a top speed run

No its mapped on the Dyno in IDEAL / controlled circumstances..

The dyon is ideal for replicating the same RPM position time and time again... EXACTLY to the point... unlike in a car trying to hold it in a certain position

The engine MAY need a slight detune in the car if it is less efficient (cooling etc)

e.g I asked for a safe strong reliable 350BHP engine, so I can turn up at any rolling road and KNOW it will pull 350-360HP

ON the Dyno she managed 375.. so once in the car knock off 10-20 HP (dpending on car etc )...
