There is no easy and cheap way to reduce the cozzie weight. There is no 35lbs insulation in the glovebox, 100lbs seats etc.
Reducing lots of weight will involve lots of carbon fibre. Bonnet, seats, doorcards, remove rearseats and unneccersary trim, replace glass with lighter lexan sheet windows etc. Probably some weight in the suspension as well that can be replaced with lighter better stronger but again, cost will be huge.

Get rid of all the electrics and run a minimal race loom that does the bare essentials. Change the glass on the sides for poly. Take the interior out. Take the lower dash out. Run a light race seat. Change the fuel tank for a small alloy one. Change the boot and bonnet for fibreglass ones. Lightest wheels are Pro Race 1.2 or similar alloy spokes. Alloy rad. Remove power steering. Strip out all the sound deadening.
How far do you want to go?

The wiring loom change - removing all the Ford wiring made a big difference to the weight of mine.
In terms of your brake servo you could lose the servo and ABS and all the lines and go for a pair of small master cylinders with no servo assist and run new brake lines - probably save a lot of weight because you take out the servo and ABS block but also the loom. If it's a race car you'll be looking for a more simple approach anyway so this option makes sense.
Going from servo assist brakes to non-servo is a bit of a shock first time - you have to mash the pedal to make the car slow down but once you get used to it its fine.
