Default Series 2 restoration advice

Hi all, sorry firstly for what will be a long read but after seeing many good restorations taking place I decided this year to start mine. Bit of background info bought my series 2 escort 8 years ago for £600 knowing it needed work was keen to take on a project, work started well a steady flow of new parts and fitting began but about 6 months down the line work slowed down expanding family tworking 6 days a week and the fact thecar was stored away from the house made it difficult to work on and before I knew it weeks turned into months and the car hadn't been touched lost faith that it would get it done.

one day the Mrs phoned to say she was popping into my work little did I realise she would roll up in an rs turbo at first I thought she had bought one till I saw the reg and I couldn't believe it was mine! What I found out she had arranged with a close family friend to have the escort taken away and with his own time and money got it running and do enough to get it road legal and usable I had not been near the car in months didn't realise it was missing lol the car quickly got a knick name westy after the man who got it done, however not long after completion he passed away after being ill for some time which gutted the whole family.
I used the escort every day as my daily drive and apart from fuel pump and minor repairs to get it passed mots never let me down, which leads me up to now I've stripped back all interior bumpers and trim and found a lot of work needed took it to a ford restoration specialist to do the shell body work and paint and been quoted £12,000 engine brakes interior s+s I can do but with little space it skills to do the bodywork has left me in a dilemma start again with new shell or try other body shops as you can imagine car holds huge sentimental value and would love to save an rs from the scrap pile I've attatched pics so you can see progress so far any advice or help with where to go would be great or if you know any body shops where you had restoration work done you would recommend,
