Easier using the RS1800 or 2.0 Zetec engine in a mk3.5 using the mountings and loom etc from a 1600 SI

What I was thinking about with the puma is that I could easily pick one up, I'm assuming that with with the rs1800 and the 2.0l I'll need a range of parts, what I'm hoping for is just an in sight to what steps I'd need to follow for the conversion

The mk3.5 fiesta never had the 1250/1400/1600/1700 zetec Se engines fitted into them as they got fitted into the mk4 fiesta "96" onwards cars. So you would have to do a bit of messing about to get it fitted in and working unlike a mk4 that's more or less plug and play.
Personally if I had a good mk3.5 shell I would be buying a rotten Fiesta SI 1600 as this will have everything you will want, looms, fuel tank and pump, subframe with power steering brakes, rear bean with anti roll bar etc and even a body kit if you wanted to use it.

Go on fiestaturbo.com engine conversions have been done plenty of times on there using a puma lump is going to be big hassle for no reason, stick to a 1.8/2l zetec e engine will drop straight in cvh or zetec mounts will fit it into the car use your current gearbox as that'l be a ib5 unit being a mk3.5 and then engine loom and ecu will plug straight in off a si and a 2l ecu will give you the 130bhp map
