baked fish dishes, need recipe ideas
ok been thinking about cooking a fresh fish food that you place in foil and cook
whats it called and how do i cook it,,,,,,,, also whats the nicest fish to cook like that

My Dad does miracles with large rainbow trout, cooked in foil, with lemon and a few herbs and stuff, been meaning for ages to ask him just exactly how 'cos it's so damn good.
As for what's the best fish? I guess I'd say trout or salmon (same difference), I'm no expert on sea fish though.

just get a trout, fillet it, make a boat type thing with tin foil, lay one piece on top of the other with king/tiger prawns between them add a splash of dry white wine, a knob of butter , some finely chopped/sliced garlic(fresh), sprinkle some thyme over it all, seal it and shove it in the oven for 15/20 mins
squeeze some lemon over it when you serve.........wah lah

what your refering to is called "en papilliot" (although i may have spelt that slightly wrong!) it would normally be wrapped in greaseproof paper before the foil though to stop it sticking to it. i would recommend seabass , just stuff it with some fresh herbs and drizzle white wine over and lemon juice. Wrap the corners so its sealed and cook in the oven, do not unwrap till its on the table infront of you or your guest.
