Plenty of cars run with no water cooling, just need to make sure your oil system can cope and ensure you run the car for a few minutes when you stop to stop heat soak into the bearings as the oil can be VERY hot and obviously engine stops = no oil being pumped around, or just take it easy for a couple of miles (off boost) before you get home, obviously water cooling is a benefit and if fitted properly can continue for ages after you switch off the engine, so I would recommend it, but then I have been running my twin turbo without it with no issues at all, just fitted an oil cooler to be sure the temps were kept stable.
