exhaust Carbon

In the middle of restoring my 4x4 cosworth. ive been cleaning and polishing the exhaust system and noticed that there seems to be a lot of carbon build-up inside. its fine from the turbo to the bottom of the downpipe but from where the downpipe ends through to the end of the centre section it seem about 1-2mm thick (worse at the top of the exhaust than the bottom.
Is this normal for a system thats been on the car a while?

anyway to clean it all out or just leave it?
