Default RS1800 - running problems, help appreciated

So i've had my fiesta rs1800 about a year now and have done a few bits and bobs. I've put a piper cross on it, ashley 4-2-1 manifold, decat and full ashley exhaust system. I've also replaced a few bits like pcv valve (crankcase pressure), idle speed control valve, ht leads, spark plugs and some other things.

but after all this it seems to be more sluggish? it doesnt seem to pull at all well an takes alot longer then it should to get up through the gears. its lost alot of power since ive had it. im at a bit of a lose end because i dont really know what else to do or change?

If i was to rolling road it would they be able to identify any parts that might be giving me my problems? i want to chip it but not until its running sweetly. any help would be extremely handy. thanks alot, dan.
