cable would easier with alot less things to go wrong
You will break cables , ratchets, pawls, pedals a lot more than any of the hydrulic components with an uprated clutch.....
I have a Reyland twin plate clutch with a centre push hydrualic conversion, fantastic bit of kit, well made, fit and forget, the kit is comprehensive and Martin and Tony were more than helpful when I came to fit it. Even with a twin plate clutch, it's just like a standard clutch

The only downsides are that you have to cut a hole in the bulkhead for the master cylinder, but who cares really apart from buftys, as the chances are it will never be removed anyway.
The second best mod on my car I recon after the brakes, thats how good it is, having suffered from years of heavy unrelible clutch cable systems, and I am sure Marco will tell you the same
