Out of interest here.....
Lets say the wheel is a 15" 205 (width)..... Would the grip be better using a 50 profile than a 60 profile? I was thinking.....If a tyre wall is a bit higher say a 60 then that has a tiny bit more room to move/flex where as a smaller profile say being the 50 would not have as much room/flex to move which I would have thought would make grip better........Or is this not the case?

Tends to change the feel more than the outright grip normally, although at the extremes (track use etc) you will find yourself rolling onto the shoulders excessively on taller tyres.
You need to consider the rolling radius against gearing and things too.
