Default Pacifica Blue Mk4 Escort Cab 2.0 CVH build

Ive owned my Pacifica Blue Escort cab for around 6 years and i set about rebuilding the stock engine because it was becoming a little tired on the top end and i fancied something abit different with abit more bottom end grunt!

So ive recently built a 2.0 cvh using a ported + polished xr2i head and american 1.9 tall block bottom end.

The spec is as follows:

American 1.9 tallblock bored to suit 2.0 zetec pistons,
1.9 crank & rods reground and retained,
standard xr3i injectors,
Cylinder Head Developments Big Valve head + Kent CVH32 + vernier,
Modified Janspeed Manifold (heatwrapped) to clear alloy sump retained from American engine,
full stainless Piper exhaust,
Piggy back chip that was previously running a 1.9 bottom end.
Bernie LSD turbo G/box.

OK the reason for my post is i have a really annoying problem i cannot get to the bottom of. The engine runs starts and runs fine from cold but will not idle properly when at running temperature. The idle hunts irratically between 500-1200 rpm and pulsates between and eventually cuts out!

As soon as it has cut out the engine hesitates to start but will usually start again if you are turning the key with the throttle open.

Ive tried a couple of things, checking all the breather hoses have no leaks and are not blocked full of crap, and ive also cleaned the idle valve out and tried an alternative one. also it has been mentioned to me there was a problem with a weber idle valve and these were switched for hitatchi ones, ive checked this and my idle valve is a hitatchi one.
ive also put a heatshield under the intake to stop heatsoak from the manifold as it was getting fairly hot before.

has anyone got any idea how i can sort this or possibly have any suggestions to point me in the right direction?
is it fueling related (i.e. injectors are nto matched to spec/heat from manifold on intake)? a problem with the breathing?
im really at a loss as to what the problem is!

standard ford ecu that has been modified with 2 chips outside the casing. This was bought via ebay a couple of years ago now but was running a 1.9cvh engine apparrently. Stuck on to the one chip it says 1.9LXR2I1.050. Apart from the problem described the engine is responsive excellerates well and has bags of torque.
Any ideas please.
