Don't know about the clutch ratchet.
I do know the play on your steering column is most likely because of a worn top-bush (the one in the scuttle) If you wiggle the steering wheel it's all over the place, right? If it only goes up and down the column adjuster needs tightening up.
If it's all over the place you need to take out the steering column and replace the bush. A bit fiddly with the securing clip that goes around the triangular part of the column but pretty straightforward.
You have to get this sorted because I am almost sure it's a MOT failure m8.
With my previous Saph (not a Cossie though) the MOT inspector didn't notice it until he had already cleared it and took it of the bridge so couldn't do anything about it anymore

Standard ratchet kit available from Ford, different colours though,so look what colour yours is
Or get a adjustable kit off Mike Rainbird, looks a good piece of kit
https://passionford.com/forum/viewto...hlight=ratchet
Ratchet is a pain in the arse to change, not much room to work
As above regarding column bush, cheap off E-Bay or from Ford, easy job
