Have looked into it.
Looks VERY hard to follow, very little in the way of cheat meals/foods, mega low carbs so you will feel like shit for a while, lots of downsides but the results are supposed to be good if you can hack it.
Looking at 60% Protein, 37% fat and 3% carbs as a rule of thumb.
Sample below;
Meal 1:
5 boiled eggs + Omega 3, 6 & 9 caps
Meal 2:
30g serving protein + tbsp natural peanut butter
Meal 3:
Chicken/Turkey breast + salad/veg + 2 tbsp Olive oil
Meal 4:
30g serving protein + 2 tbsp of walnut oil
Meal 5:
Chicken/Turkey breast + tbsp natural peanut butter
Meal 6:
5 boiled eggs + Omega 3, 6 & 9 caps

As for understanding it, it is a science tbh...
As far as i am aware, it tricks your body into thinking it is starving, so your body then feeds on fat rather than carbohydrates.
So because your body is using fat, the liver converts the fat in your diet to fatty acids which go to the brain and replace glucose(processed carbs) as the preffered source of energy.
Its pretty complicated but there is lots online about it. I just dont think i have a lifestyle that i could adapt to commit fully to the keto diet. If you dont commit fully... it wont work.
It also takes 4-6 days following the diet to get into ketosis, then the hard bit is keeping your body in ketosis!
Good luck if you go for it, let us know how you get on.

Too much research
Dieting/Nutrition/fitness/weight gain and loss had been my life for the last year, surprised the stuff i've picked up when looking into different kind of diets an stuff.
Keto seems to be for the hardcore, hence why i've never tried it i think.
