Thought it might be a decent post, add your own :

Two that I've been *really* impressed by...

Solo Training (Martial Arts) - Loren W. Christiensen (and pretty much anything I've seen by this author, don't have to be a MA nut either)

Strength Training Anatomy - Frederic Delavier ... The pictures and explanations are absolutely first-rate. One of the best reference books I've ever seen.
